Milling the grains to the perfect consistency ensures optimal fermentation. While we don't use heirloom grains, we use family raised grain, cared for families who depend on quality to live.
Fermentation and Distillation

Smaller copper stills (can you believe 500 gallon is "small"?) are often used for distillation, allowing precise control over temperature and separation of alcohol fractions. This results in a cleaner, more refined spirit. More importantly, we're more hands on about WHEN the cuts occur, leading to a higher quality spirit. Bottom shelf spirits on on the bottom by chance, those spirits include lesser alcohols, to save money.
Aging and Blending
Aging in oak barrels adds complexity and depth. Craft distilleries experiment with different barrel types, char levels, and aging durations. Master blenders then combine various barrels to create a balanced final product. Our "Master Blender" is Guy, but don't call him that, he believes he's got a long way to go to earn that title.
